For a simple and uber-healthy main course… Did we forget to say ‘flavorful’?  Take 2 chicken breasts (approx. ½ lb each) and score both sides. Salt & pepper the top side, and sprinkle with garlic powder. Cook for 15” at 375 degrees. Remove from oven and turn the breasts. Mix 1 tablespoon Citrus ISH with 1 tablespoon of Dijon mustard. Spread the top side of each breast with the mixture; Sprinkle kosher salt (or sea salt) and fresh-ground pepper on top. Cook for 20 minutes at 375 degrees. Move to top rack and broil (high) for 5-6 minutes. Sprinkle with freshly chopped parsley and serve.
